Situated in the heart of the Côte de Nuits district, the vineyard rests on well-draining limestone and chalk soils that impart minerality and finesse to the fruit. The site’s unique orientation and cool nights contribute to slow, even ripening, preserving the wine’s natural acidity and aromatic precision.

Winemaking Process

Hand Harvesting

Grapes are carefully harvested by hand at optimal maturity to ensure perfect phenolic ripeness. Clusters are sorted in the vineyard and again at the winery to select only the healthiest fruit.

Fermentation and Aging

Spontaneous fermentation takes place in stainless steel vats, captured under controlled temperatures. The wine then spends 12–14 months in French oak barrels (30% new) to develop subtle spice, toast, and vanilla nuances without overpowering the varietal expression.

Tasting Profile

This Côte de Nuits Cœur de Roches opens with enticing aromas of red cherry, raspberry, and floral violet. The mid-palate reveals layers of pomegranate, cranberry, and a touch of forest floor. Refined tannins and vibrant acidity carry the wine to a persistent, mineral-driven finish.

From Dijon to Corgoloin, the Côte de Nuits stretches over about twenty kilometers and covers an area of ​​1,500 hectares. The particularity of the soil in Côte de Nuits is its ancient limestone layer, called "Middle Jurassic", which dates back 160 to 180 million years. This cuvée is a blend of terroirs from hillside plots, on a geological fault where the subsoil is made up of deep, raw limestone bedrock, with a little soil on the surface. The roots of the vine infiltrate the cracks in the rock and distill the minerals, essential elements of the fresh and crystalline texture of this wine with lively and chiseled tannins.
