Vincent Girardin - Santenay Vieilles Vignes

Burgundy - Santenay AOP

Vineyard
Maison Vincent Girardin, created in 1982 with 2 hectares, has developed its activity over the years, adding a trading activity in 1990, carried out head-on and with talent. Bought in 2012 by the Compagnie des vins d'autreviens, Maison Girardin is managed by Eric Germain, Technical Director and oenologist of the House since 2002, who remains on the same path, perpetuating its high-end wine ethics.

Winemaking
Harvesting and manual sorting. The grapes are destemmed and placed in thermoregulated stainless steel vats. Alcoholic fermentation with native yeasts. Reassembly respecting the material. This is followed by gentle pressing, then aging in barrels (20% new barrels) for 15 months, where malolactic fermentation takes place. One month before bottling, the wine from the different barrels is assembled in vats. No fining, and bottled according to the lunar calendar.

Tasting
