Christophe now owns 11 hectares of vines spread across the magnificent terroirs of Hunawihr and Ribeauvillé. The vines, averaging 30 years old, are planted on Muschelkalk marl-limestone soils. Vinification The whole grapes are pressed and transported to the presses without any harshness or crushing. Aging takes place on lees in oak barrels for 6 to 9 months. Tasting This wine has a straw-yellow color. It offers an intense nose with aromas of rose, dried flowers, and exotic fruits with slightly spicy notes (black pepper, licorice). Intense on the nose, it releases aromas of fresh exotic fruits and beautiful spicy notes (clove, star anise, etc.) that linger on the palate. Flavorful on the palate, this Gewurztraminer boasts a few grams of residual sugar and a subtle acidity that already gives it a beautiful balance. A wine of beautiful complexity that reveals an elegant persistence. Serving Advice Serve it chilled, around 8°C. It will pair well with foie gras, spicy or exotic dishes, and many other dishes: Provençal-style tuna, monkfish with saffron, bouillabaisse, cod fritters, etc. It also pairs well with strong cheeses and fruit-based desserts. |
