Tasting Notes
Aromas
On the nose, expect vibrant notes of wild red cherry, wild strawberry and raspberry, complemented by delicate hints of violet, peony and a whisper of white pepper.
Palate
The palate is silky and well-balanced, with juicy red-berry flavors, subtle earthiness and refined tannins. A touch of minerality and a refreshing acidity carry the wine to a persistent finish that lingers with flavors of cranberry and a faint floral echo.
Vinification & Ageing
Hand-harvested grapes undergo a gentle carbonic maceration followed by a short fermentation to preserve freshness and purity of fruit. The wine is aged for 6–8 months in temperature-controlled stainless steel tanks, ensuring vibrancy and clarity of flavor.
Food Pairing
This Brouilly is wonderfully versatile: pair it with charcuterie boards, terrines and pâtés, roast poultry with herbs, mushroom risotto or mild cheeses such as Brie and Comté. Its lively acidity also complements grilled salmon and Asian-spiced dishes.
Serving & Cellaring
Serve slightly chilled between 12–14 °C to highlight its fresh fruit character. While eminently enjoyable upon release, it can age gracefully for 3–5 years, developing additional complexity and savory notes.
