Petit Chablis

The Savary family is based in Maligny in the heart of the Chablis vineyards. The vineyard represents 20 hectares of vines cultivated in cultivated agriculture (HVE 3 and Terra Vitis labels). It brings together 2 of the oldest winegrowing families in Chablis. Francine Bachelier, originally from Villy, brought back from her native country a history of more than 200 years. Olivier Savary, with a background in winegrowing and oenology, brings his know-how.

Vinification
Mechanical harvest. The grapes are received on a three-level table, since the loading of the presses by gravity is adapted. The lifting is carried out to start the alcoholic fermentation for 12 days, before the malolactic fermentation which lasts about 2 months. The lifting is carried out in a stainless steel tank.
