This Château Canon is dense and very fruity: on blackberry, blueberry and morello cherry in depth. The palate recalls black truffle, leather and spices, with suppleness and balance.

The wine is round, dense, and very fruity: deep notes of blackberry, blueberry, and morello cherry. The palate evokes black truffle, leather, and spice, with suppleness and balance. Its fine tannins ensure it will age well for a few years, but its freshness makes it very enjoyable now.

Vineyard
At Château Canon Chaigneau, the vines were already being cultivated by monks in the 15th century. Today, they cover 21 hectares on clay-limestone soil, extending from the most prestigious part of the Pomerol plateau. The estate was acquired in 2020 by the Arconian family, in partnership with the Marin family, who have been involved with the vineyard for nearly sixty years and remain committed to its legacy. They began the HVE3 certification process in 2021 and aim to transition to organic farming soon. Tour Canon is a cuvée produced on the estate, made from a selection of specific plots and aged in tanks for a distinctive character.

Winemaking
After serving as cellar master at Château Cheval Blanc for 38 vintages, Thierry Garnaud now manages the winemaking process. This cuvée is vinified and aged primarily in concrete tanks, with only 10% aged in new oak barrels for one year.

Serving Suggestions
It pairs beautifully with grilled and confit vegetables, roasted poultry, a rump steak with pepper sauce, or raw milk cheeses.
