Burgundy - Volnay 1er Cru AOP
VineyardThe vines, approximately 65 years old, spread over almost 2 hectares, are located in the Volnay 1er Cru “Les Santenots” appellation area in the commune of Volnay. The subsoil is clay-limestone and the soil is marl-limestone from Oxfordian to red clay. From a cultural point of view, the vines are low, pruning is carried out in Guyot and various green works (disbudding, trellising, topping and green harvest) are carried out during the year.
WinemakingThe harvest is manual, with light crushing and destemming in stainless steel vats. After cold maceration for a few days, the active phase of fermentation takes place with temperature control. During this phase, pumping over and/or punching down is carried out. When fermentation is complete, the free run juice is separated from the solid parts. The marcs are pressed, at low pressure, in a pneumatic press. The wines are placed in barrels (around 20% new wood) where aging takes place for 14 months. One month before bottling, the wine from the different barrels is assembled in vats.
TastingThis is a rich wine, with a lot of finesse on an aromatic register of small red fruits. It is fine, with creamy tannins.FEATURES
